Ingredients and substitutes

Heavy whipping cream Use a heavy cream with 35-40% fat content for the best results.
Whey protein powder I used vanilla flavored sweetened with stevia. Chocolate-flavored or unflavored will work fine. If using unflavored add 1/4 tsp of vanilla extract.
Chocolate In general I like to reduce the sugar content of my desserts which makes dark chocolate 70% usually my choice. If you are not a fan of dark chocolate feel free to substitute with semi-sweet chocolate.
Powdered Sweetener (optional) If you want to make this dessert sweeter I recommend using powdered sweetener. Granulated sweetener might not melt completely and liquid sweetener might prevent forming the airy mousse texture.

How to make protein mousse recipe

  1. Melt the chocolate and 2 tbsp (30g) of heavy cream in a double boiler or a microwave. Stir the chocolate to make sure it is evenly melted.
  2. Place the melted chocolate in the refrigerator for 10 minutes to cool down.
  3. In the meantime, beat together the heavy cream, protein powder, and optionally powdered sweetener until firm peaks form.
  4. Gently fold in whipped cream into cooled melted chocolate until combined. Portion the mixture into two serving cups and refrigerate for at least 3 hours before serving.

Ingredients
  

  • 2 tbsp (30g) heavy whipping cream 35-40% fat
  • 1/2 cup (120ml) heavy whipping cream 35-40% fat
  • 1/4 cup (50g) chocolate dark or semi-sweet (I used 70% dark chocolate)
  • 1/3 cup (30g) whey protein powder (I used vanilla flavored)
  • 1 tbsp powdered sweetener (optional)

Instructions
 

  • Melt the chocolate and 2 tbsp (30g) of heavy cream in a double boiler or a microwave in a microwave-proof bowl. Stir the chocolate to make sure it is evenly melted. Once melted, place the chocolate in the refrigerator for 15 minutes to cool down.
  • In the meantime, combine a heavy cream, and protein powder, and optionally powdered sweetener into the mixing dish. Use a hand mixer or a standing mixer to beat the cream until firm peaks form.
  • Remove the cooled chocolate from the refrigerator. Using a rubber spatula, gently fold in whipped cream into the chocolate until combined. Portion the mixture into serving cups and refrigerate for at least 3 hours to let the mousse firm up before serving.
  • Serve with more whipped cream sprinkled with chocolate shavings.
