What you will need to make chickpea flour grissini breadsticks

Chickpea flour I used finely ground chickpea flour.

Baking powder Helps to level the breadsticks in the oven a bit which gives them a nice cracked look and crispy texture.

Salt Queen of savory treats.

Garlic powder Subtle garlic taste plays nicely with the chickpea taste. But if you are not a fan of garlic, you might omit this ingredient and maybe try to use dry basil or Italian seasoning mix here to hit that Italian note.

Parmesan This recipe calls for grated parmesan cheese. It is not a secret ingredient in Italian cuisine and I love to use it whenever possible. It has a strong savory nutty taste that is just ideal for these chickpea flour grissini breadsticks.

Egg Holds everything together. Doesn’t need to be room temperature.

TIP
You can play around with different spices. Add some basil or italian seasoning to the dough. I would recommend to use no more than 1/2 tsp of dried herbs and maximum 1/4 tsp if the seasoning contains salt.

Chickpea Flour Grisini Breadsticks (gluten free)

Ingredients
  

  • 87 g chickpea flour, finely ground
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • pinch of garlic powder (or more to taste)
  • 25 g parmesan, grated
  • 1 egg

Instructions
 

  • Preheat the oven to 180C/350F degrees. Line the baking pan with parchment paper.
  • In a large mixing bowl whisk the chickpea flour, baking powder, garlic powder, salt, and parmesan.
  • Add lightly whisked egg to the mixture and using a spatula or hand mix all ingredients until they come together as a firm dough.
  • Divide the dough into 8-10 equal parts (you can use a knife and a kitchen scale to get more precise portions). Roll each part into a ball in your hands first, then put it on the clean kitchen counter or cutting board and roll each ball into approx. 12 cm long even breadstick.
  • Place rolled breadsticks on the prepared baking pan 1 inch apart.
  • Bake for 18-20 minutes or until slightly cracked and golden brown.
  • Let them cool on the baking pan before removing them.
