Chia seeds are another powerful ingredient in this recipe, rich in nutrients, including fiber, protein, omega-3 fatty acids, minerals like calcium, magnesium, phosphorus, and antioxidants. Lastly, apples, especially thanks to their peel, are a great source of fiber, too.

Great breakfast cookie alternative If you’re tired of the same old oatmeal, give these flax apple breakfast cookies a try and mix up your morning routine.

What is in these flax apple breakfast cookies and substitutes

Flaxseed flour or finely ground flaxseed. I used golden flaxseed flour, but brown flaxseed flour can be used, too. It’s the only flour used in these cookies.
Butter Makes the cookies soft and tasty.
Honey Can be substituted with any other liquid sweetener as maple syrup. I think granulated sweeteners should work here, too. If you want to make a low-carb version, use erythritol or xylitol.
Grated apple I grated mine with a peel on for extra fiber. You can taste the peel in the cookies a bit, so if you don’t like it, feel free to peel the apple before grating it. Also, any apple variety should work in these cookies.
Cinnamon One of a kind spice that goes so well with an apple. If you feel fancy, also add some nutmeg or a bit of cardamom to the dough.
Baking powder Leavening agent.
Chia seeds (optional) I love to add chia seeds to this (or any) recipe for extra fiber and omega-3 fatty acid intake. Here, I listed them as optional as they become crunchy after baking, so if you do not like small crunchy seeds in your food, feel free to omit them.

How to make these flax apple breakfast cookies

  1. Whisk together wet ingredients – soften or melted butter and honey.
  2. Add dry ingredients – flaxseed flour, baking powder, and cinnamon, to the mixture and mix until well combined.
  3. Fold in add-ins – grated apple, chopped walnuts, and optionally chia seeds.
  4. Scoop 1 1/2 – 2 tbsp of the dough and roll it into a ball. Place it on the parchment, and press it slightly to a disk shape. Repeat with each scooped dough piece. There should be enough dough for about eight cookies.
  5. Bake at 350°F/180°C degrees for 20 minutes or until golden brown.

Ingredients
  

Dry Ingredients

  • 1/2 cup (70g) flaxseed flour (I used golden flaxseed flour.)
  • 1/2 tsp cinnamon
  • 1/4 tsp baking powder

Wet Ingredients

  • 2 tbsp (30g) butter soften or melted
  • 2 tbsp (45g) honey

Add Ins

  • handful of (25g) chopped walnuts approx. 1/4 cup
  • 1/2 cup (70g) apple, grated with a peel approx. 1/2 apple
  • 1 tbsp chia seeds (optional)

Instructions
 

  • Preheat the oven to 350°F/180°C degrees. Line the baking sheet with parchment paper.
  • In a large mixing bowl, whisk together butter with honey. Add dry ingredients – flaxseed flour, cinnamon, and baking powder and mix until well combined.
  • Fold in grated apple, chopped walnuts, and optionally chia seeds.
  • Scoop 1 1/2 – 2 tbsp of the dough and roll it into a ball. Place it on the parchment, and press it slightly to a disk shape. Repeat with each scooped dough. There should be enough dough for eight cookies.
  • Bake for 20 minutes or until the cookies are golden brown.
  • Remove the cookies from the oven and let them cool on the baking sheet for 10 minutes before transferring them to a wire rack. Serve with a glass of milk or your favorite tea.
