Homemade Protein Reese’s (9g of protein, gluten-free)

These Homemade Protein Reese’s are a healthier version of classic store-bought Reese’s. They are packed with protein, but reduced in sugar. Sweetened with honey, and of course chocolate. You can use dark chocolate for an even healthier outcome. Have them as a post-workout snack or as a simple healthy treat with your coffee.

Ingredients

Peanut butter Smooth and unsalted. One of the protein-rich ingredients in this recipe.
Butter Soften. Gives the peanut butter filling a nice texture and enhances the taste.
Honey Sweetener, can be substituted with maple syrup.
Whey protein powder Main source of protein – I used unsweetened and unflavored protein.
Oat flour Finely blended oats. Gives the filling a nice texture.
Cinnamon Enhances the taste.
Salt Combination of peanut butter and salt is a holy combination.
Chocolate Milk chocolate is traditional chocolate used in Reese’s. Making homemade Reese’s gives you the option to make them healthier by replacing milk chocolate with dark chocolate. I recommend using chocolate with up to 70% of cocoa content.

How to make this homemade protein Reese’s

You will need muffin cups to make the traditional shape of Reese’s. I found working with silicon cups the best. If you don’t have silicon ones, paper cups should be fine as long as you place them in a muffin pan to hold their shape.

  1. In a medium bowl, mix all ingredients for the filling until the dough forms. Refrigerate for the time you melt the chocolate.
  2. Melt 1/2 cup (85g) of chocolate, and distribute it evenly into 6 muffin cups.
  3. Remove the peanut butter filling from the refrigerator. Divide it into six even pieces and form them into a disk – a flattened ball. Place each disk into the chocolate cup and help it dive deeper, so the chocolate will cover the walls (not the top) flatten it a bit so it takes the space of the cup and is flat on top. Refrigerate for the time you melt the rest of the chocolate.
  4. Melt the rest of the chocolate – 1/3 cup (60g). Remove the cups from the refrigerator and distribute the chocolate evenly on top of the peanut butter filling. Refrigerate for 20 minutes before serving.
  5. Store in the refrigerator or in a dark cold place in an air-tight container.

Peanut butter filling

  • 1/4 cup (60g) peanut butter
  • 3 tbsp (35g) butter soften
  • 1 tbsp (20g) honey
  • 1/3 cup (30g) whey protein powder unflavored
  • 1/4 cup (25g) oat flour blended oats
  • 1/4 tsp cinnamon
  • 1/4 tsp salt

Cover

  • 1/2 + 1/3 cup (85g + 60g) chocolate I used 70% dark chocolate.

Instructions
 

  • In a medium bowl, mix all ingredients for the filling until the well-combined dough forms. Refrigerate for the time you melt the chocolate.
  • Melt 1/2 cup (85g) of chocolate in a double boiler or a microwave in a microwave save dish. and distribute it evenly into 6 muffin cups.
