Ingredients and substitutes

Banana Adds moisture and a great natural sweet taste. I used ripped bananas, but you can use bananas at any stage of ripeness. The ripper banana, the sweeter and more flavourful the brownies will taste.
Oats Rolled oats, but quick or instant oats will work fine as well.
Cocoa powder You can use natural or Dutch processed cocoa or a combination of the two.
Baking powder Leavening agent
Egg + egg yolk Or simply using two eggs is also possible.
Almond butter Gives the brownies a nice texture and taste. Feel free to experiment and replace it with your favorite nut butter.
Coconut oil Helps with the texture and moisture. Can be substituted with melted butter if dairy-free is not necessary.
Dark Chocolate Melted, so it’s easily incorporated into the butter when blended. I used non-dairy 70% dark chocolate.

  2. Bake at 180°C/350°F degrees for 20 minutes. Let cool for at least 30 minutes before serving.

Ingredients
  

  • 170 g banana ripe
  • 30 g oats
  • 15 g cocoa powder
  • 1/2 tsp baking powder
  • 1 egg
  • 1 egg yolk
  • 110 g almond butter
  • 40 g coconut oil
  • 70 g honey
  • 50 g melted dark chocolate (I used dairy-free 70% chocolate.)

Instructions
 

  • Preheat the oven to 180°C/350°F degrees. Grease a 6×8-inch pan, or line with parchment.
  • In a high speed blender, blend all ingredients until smooth. Spread the batter evenly into the pan.
  • Bake for 20 minutes minutes. Let cool for at least 30 minutes before serving. Serve with frosting or a scoop of your favorite ice cream.
