Chickpea flour Finely ground. It’s important to use finely ground chickpea flour as it yields the best result in softness and taste. I don’t recommend using any other flour in these cookies.
Butter Makes these ginger cookies soft and tasty.
Egg Holds the cookies together.
Honey Can be substituted with another liquid sweetener, such as maple syrup.
Baking powder Leavening agent.
Cinnamon Nicely complements the warm ginger taste and smell.
Ginger powder Ginger is what makes ginger cookies ginger 🙂
Ground cloves (optional) Optional, but highly recommended if you want to level up the ginger cookies game.

Chickpea Flour Ginger Cookies (gluten-free)
Ingredients
- 280g chickpea flour finely ground
- 140g soften butter
- 1 egg
- 100g honey
- 2tsp baking powder
- 1 1/2 tsp cinnamon
- 1 tsp ginger powder
- 1/4 tsp ground cloves (optional)
- pinch of salt
Instructions
- Preheat the oven to 180 degrees. Line the baking sheet with parchment paper and set aside.
- Mix together the egg and honey, and soften butter. Add remaining dry ingredients and mix until the dough is formed.
- Roll the dough into 18 evenly-sized balls. Place them on the baking sheet and flatten each ball to a disk shape with your fingers.
- Bake for about 10 minutes until golden brown. Let cool on a wire rack.
