This Healthy Oat Strawberry Cobbler is easy to make (hello, one bowl recipe) and tastes like strawberry heaven. It’s gluten-free and made only with blended oats. Instead of sugar it’s sweetened with honey, and packed with fresh strawberries giving it a perfect natural sweetness and irresistible smell. Have it warm with a scoop of vanilla ice cream or a spoon of sour Greek yogurt for extra protein.

Oat flour Blended rolled oats in a high-speed blender for about 30 seconds.
Baking powder Leavening agent.
Salt To enhance the sweet taste of the cobbler.
Honey Sweetener. It can be substituted with maple syrup.
Milk Plant-based or dairy.
Strawberries Fresh and diced or cut into smaller pieces.

How to make this healthy oat strawberry cobbler

Making this healthy oat strawberry cobbler is super easy. You will only need one big bowl and a whisk and/or a hand mixer.

  1. Preheat the oven to 180°C/350°F degrees. Put the cold butter in the porcelain 5×8-inch pan and place it in the oven to melt for about 15 minutes.
  2. In a large bowl, whisk together oat flour, baking powder, and salt. Add in honey and milk and whisk until smooth. You can use a hand mixer to speed the process up.
  3. Remove the pan with melted butter from the oven. Slowly pour the batter into the pan. Lastly, evenly distribute diced strawberries into the pan.
  4. Bake for 20-25 minutes or until the toothpick inserted in the center of the cake come out clean. Let cool for 15 minutes before serving with a scoop of ice cream or a spoon of Greek yogurt.

  • 2/3 cup (80g) oat flour rolled oats blended in high speed blender for 30 sec
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 tbsp (80g) honey
  • 1/2 cup (120 ml) milk
  • 1 cup (130g) fresh strawberries, diced
