How to make this Protein Banana Bread

Making this protein banana bread is super easy. You’ll need two bowls, a large one and a medium one, a whisk, and a spatula. The majority of the work happens in the oven 😉

  1. Whisk together all dry ingredients in a large bowl – almond flour, tapioca flour, protein powder, baking powder, cinnamon, and salt.
  2. In a separate bowl, mash bananas with a fork. Add eggs and melted butter and whisk until just combined.
  3. Add wet ingredients to the dry ingredients and mix until combined.
  4. Optionally fold in add-ins – chocolate chips, nuts, or raisins.
  5. Bake at 180°C/350°F degrees for 35-40 minutes. Let cool for 15 minutes in an open, turned-off oven, and then transfer to a wire rack to cool completely.

Ingredients
  

Dry ingredients

  • 1 cup (115g) almond flour
  • 2 tbsp (20g) tapioca flour or substitute with more almond flour
  • 1 cup (90g) whey protein powder unflavoured
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • pinch of salt

Wet ingredients

  • 1 1/4 cup (330g) ripe banana mashed (3 medium bananas)
  • 2 eggs large
  • 1/4 cup butter melted

Add-ins (Optional)

  • 1/3 cup chocolate chips or nuts

Instructions
 

  • Preheat the oven to 180°C/350°F degrees. Line the 8×4 inch loaf pan with parchment paper.
  • In a large bowl, whisk together dry ingredients.
  • In a separate medium bowl, mash bananas with a fork. Add eggs and melted butter and whisk until just combined. Don’t overmix.
  • Add the wet ingredients mixture to the bowl with the dry ingredients and mix until just combined.
  • Optional: Fold in chocolate chips or nuts.
  • Pour the batter into the pan evenly.
  • Bake for 35-40 minutes or until the toothpick inserted in the center of the cake come out clean.
  • Let cool in the open turned-off oven for 15 minutes, and then transfer to a wire rack to cool at room temperature completely.
