Ingredients
Dry Ingredients
1/2 cup(70g)flaxseed flour(I used golden flaxseed flour.)
1/2 tspcinnamon
1/4 tsp baking powder
Wet Ingredients
2 tbsp(30g)buttersoften or melted
2 tbsp(45g)honey
Add Ins
handful of(25g)chopped walnutsapprox. 1/4 cup
1/2 cup(70g)apple, grated with a peelapprox. 1/2 apple
1 tbspchia seeds (optional)
Instructions
Preheat the oven to 350°F/180°C degrees. Line the baking sheet with parchment paper.
In a large mixing bowl, whisk together butter with honey. Add dry ingredients – flaxseed flour, cinnamon, and baking powder and mix until well combined.
Fold in grated apple, chopped walnuts, and optionally chia seeds.
Scoop 1 1/2 – 2 tbsp of the dough and roll it into a ball. Place it on the parchment, and press it slightly to a disk shape. Repeat with each scooped dough. There should be enough dough for eight cookies.
Bake for 20 minutes or until the cookies are golden brown.
Remove the cookies from the oven and let them cool on the baking sheet for 10 minutes before transferring them to a wire rack. Serve with a glass of milk or your favorite tea.
